| Ellen's Cucumber Hummus Bites |
I had
Emily and her husband over last week for a mid-week dinner date. Because it was in the middle of the week, I wanted to make sure everything was easy and quick to make - especially the appetizer. I didn't want to just set out my go-to dinner appetizer spread (olives, goat cheese, crackers, fruit) so I made this Cucumber Hummus Bite instead. And, it's South Beach diet friendly.
Ingredients:
- 1 English cucumber
- 1 container of hummus (I used roasted red pepper)
- Sesame seeds
Directions:
- Wash cucumber. Cut in small small rounds and put on your serving dish.
- Put hummus in a zip lock bag. Cut a small corner off. Squeeze hummus on top of cucumbers.
- Sprinkle with sesame seeds (if you want).
- Serve.
