Easy Recipe: Cucumber Hummus Bites.

Ellen's Cucumber Hummus Bites
I had Emily and her husband over last week for a mid-week dinner date. Because it was in the middle of the week, I wanted to make sure everything was easy and quick to make - especially the appetizer. I didn't want to just set out my go-to dinner appetizer spread (olives, goat cheese, crackers, fruit) so I made this Cucumber Hummus Bite instead. And, it's South Beach diet friendly.

Ingredients:
  • 1 English cucumber
  • 1 container of hummus (I used roasted red pepper)
  • Sesame seeds
Directions:
  1. Wash cucumber. Cut in small small rounds and put on your serving dish.
  2. Put hummus in a zip lock bag. Cut a small corner off. Squeeze hummus on top of cucumbers.
  3. Sprinkle with sesame seeds (if you want).
  4. Serve.
Enjoy,
Ellen
